Yes you can, at condition you use a RGB-workflow all the way (in preference the AdobeRGB colorspace). making highresolutions PDF's is no problem. The Final pdf-RGB to CMYK conversion can be done by your printer or you can use yourself a pdf conversion tool who handles this color transformations.
